ARTICHOKE AND MANDARIN BROTH

Ingredients:

  • 5 artichokes
  • 1 leek
  • 800 ml of water or vegetal broth
  • 2 tangerines
  • Paprika
  • Olive Oil extra virgin
  • Salt

Step 1: Clean the artichokes, remove the outer leaves and the part of the stem that is driest. Dip in water with parsley so that they do not darken.

Step 2: Clean and chop the leek, put it in a saucepan with a tablespoon of oil, and lightly sauté.

Step 3: Add the chopped artichokes with a little salt.

Step 4: Add the water or broth and cook for 30 minutes over medium heat.

Step 5: Remove the artichokes and the leek and add the tangerine juice. Serve with a little paprika.
